Super Sloppy Sloppy Joes

  • 2 lbs freshly ground hamburger meat
  • 1 cup diced red bell pepper
  • 1 cup diced green bell pepper
  • 1 cup diced onion
  • 1/4 cup parsley – chopped
  • 1/2 cup cilantro – chopped
  • 4 cloves garlic – minced
  • 1/8 cup apple cider vinegar
  • 1/8 cup sherry vinegar
  • 1/4 cup brown sugar
  • 1 can tomato paste
  • 2 tbs smoked paprika
  • 1/2 cup orange juice
  • 2 cup water
  • salt and pepper – to taste
  • 1 loaf of bread (I used a garlic loaf of bread. Bread made with whole garlic cloves in the bread itself – my local store has this and most stores have this in the bakery department).
  • 1/2 cup parmesan

Instructions

  1. In a large stock pot add olive oil and butter over medium heat. Add onion, red bell pepper, green bell pepper and cook until the onion is translucent – about 5 minutes.
  2. Add garlic and cook for 1 minute – until the garlic smells delicious.
  3. Add smoked paprika, brown sugar, salt and pepper. Cook for 1 minute.
  4. Add tomato paste and cook for 3 minutes.
  5. Now add all the remaining ingredients.
  6. Bring to boil and reduce to a simmer. Cook for 1 hour (Add additional water if needed while it is cooking). Most of the liquid should have simmered out of the sloppy joe mixture and it should look like sloppy joes now.
  7. Add 1/4 cup cilantro and parsley and cook for 5 more minutes. Remove from heat.
  8. Slice your bread into 1 to 1 1/2 inch thick pieces. Butter both sides liberally and place in oven under the broiler. Watch bread carefully and flip when the top of the bread has browned (do not let it burn). Take bread out of the oven when the 2nd side has browned.
  9. Place 1 or 2 slices of bread on each plate and add freshly grated cheese and sprinkle cilantro over the bread and plate.
  10. Now spoon the sloppy joe mixture over the bread, sprinkle a little bit of cilantro and Parmesan over the top of the sloppy joes and you’re ready to eat.

Variations

You can omit the orange juice and just add enough water to just cover the meat mixture.

I made a spicy version of this by replacing the water and orange juice mixture with a spicy sauce I made in a blender with: 1/2 cup orange juice, 2 cups water, 3 cloves raw garlic, 1 dried ancho chili (sliced, deveined, de-seeded and roasted each side in a pan for 1 minute over medium high heat to bring out the oils) and 4 chipotle peppers.

  • 2 lbs ground beef
  • 1 poblano chili
  • 3 carrot – sliced
  • 1 celery stalk – chopped
  • 2 medium sized onions – finely chopped
  • 6 cloves garlic – minced
  • 3 green onions
  • 6 slices bacon – finely chopped
  • 2 cups mushrooms – sliced
  • 3 green onions – sliced thinly
  • 1/3 cup milk
  • 1 cup chopped cilantro
  • 1 cup fresh bread crumbs
  • 4 tbs. mustard
  • 1/4 cup ketchup
  • 1/4 cup favorite bbq sauce
  • 6 tbs. butter
  • 4 tbs. olive oil
  • salt – to taste
  • pepper – to taste
  • 1 tbs. thyme
  • 5 tbs. garlic red chili sauce
  • 2 tbs. smoked paprika
  • 2 tbs. ancho chili powder
  • 2 tbs. chipotle powder

Instructions

  1. Soak the breadcrumbs in milk.
  2. Place saute pan over medium heat with olive oil and butter. When butter has melted add 1 cup onions, 1 carrot, 1 green onion and celery. Cook for 5 minutes, until the carrot has softened. Add garlic, 1 tsp garlic red chili sauce, 1 tbs. smoked paprika, 2 tsp. ancho chili powder, 2 tsp. chipotle powder, pepper (to taste). Cook for 1-2 minutes.
  3. Place the food in saute pan in a large bowl. Add chopped bacon, bread crumbs, ground beef, salt, pepper and cilantro. Mix all ingredients together.
  4. Place half of the meat mixture into a 9x4x3 loaf pan and press down.
  5. In saute pan over medium heat add olive oil and butter to pan. When butter has melted add mushrooms, 1 cup onions, 2 green onions, 2 carrots, poblano pepper. Cook until the mushrooms softened. Now add 1 tbs. smoked paprika, salt, pepper and 1 tbs. thyme to mixture. Cook for 2 minutes. Take off the heat.
  6. Add mushroom mixture to the loaf pan. Top off the pan with the remainder of the meat mixture. Back at 350 degrees for about 1 hours, until the meat is at 155 degrees.
  7. Prepare the glaze. Mix 1/3 cup ketchup, 1/3 cup bbq sauce, 4 tbs. dijon mustard, 4 tbs. garlic red chili sauce, 1/4 cup brown sugar, salt and pepper.
  8. Take the meat out of the oven and apply the glaze to the top and sides. Place loaf pan in the oven on broil. When the glaze begins to bubble take the loaf pan out of the oven
  9. Let sit for 10-15 minutes.

  • 1 lb steak, twice through grinder, with good fat attached, only highest quality
  • mustard

  • tabasco
  • Shallots
  • Worshteshire
  • Egg yolks
  • Pepper
  • Salt

Instructions

  1. Mix the ground steak, mutard, tabasco, shallots, egg yolks, pepper, salt, capers worsteshire.
  2. As far as proportions go – this is truly up the chef. You’ll have to make it and taste as you go.
  3. Indent the middle of the steak and add one egg yolk.
  4. Now we’ll place flavors on 4 sides of the plate.  A dollup of mustard on one side, capers on the other side, tabasco on the 3rd side, and worsteshire on the 4th side.
  5. I’ve only had steak tartare in Spain. You have to be very careful about the quality of steak that you have. It should be the freshest and cleanest meat when you make this. Do not make this with ground hamburger meat. That’s a health risk.
